If it's Friday it must be Frittata Time!
Actually, a frittata is my "go-to, I've no idea what I'm going to make" dinner! It's so easy and it's Keto friendly! 8 eggs whisked with a bit of milk, salt and pepper. I cook up one package of sweet italian sausage (pork or chicken), dice up a couple of shallots which I lightly brown in the pan while I'm draining off the fat from the sausage. I add in about a cup of chopped baby spinach and wilt it in the pan with the shallots. I then let everything cool a bit while I butter the pie dish. I pour in the egg mixture then add in the sausage and shallot/spinach mixture. Pop into a 350 degree oven for 30 minutes and voila! Dinner is ready! No, I don't add cheese...not good for the VO sound if I have to pop back into the booth for an audition!
